Enset (Ensete ventricosum), often\\r\\nreferred to as the \\\"tree against hunger,\\\" is a staple crop in\\r\\nEthiopia, playing a crucial role in food security. The fermentation of enset\\r\\nenhances its nutritional value, flavour, and storage life. This review examines\\r\\nthe various fermentation processes involved in enset production, focusing on\\r\\noptimization techniques to improve yield, quality, and safety. The microbial\\r\\ndynamics, biochemical changes, and traditional practices associated with enset\\r\\nfermentation are explored, along with recent advancements and future research\\r\\ndirections.
